Fettuccine Al Limon with Bacon

The bacon in this dish takes the classic Italian favourite to a whole new level, yielding a super quick and flavourful pasta recipe. It’s got colour and crunch and zing!

2 cups. Pasta boiled (We used Fettuccine in this dish)
8-10 strips bacon
1-2 Tabespoons extra-virgin olive oil
1 bunch asparagus, trimmed and cut to large pieces
4 garlic cloves, crushed
2 lemons – we will be using the Zest and Juice.
4-5 tablespoons grated Parmesan cheese.
Cherry Tomatoes or basil leaves for garnish

Cook pasta according to directions, Drain and set aside. Reserve one cup of the water.

Heat oil in pan and cook bacon strips gently until done. Transfer onto paper towel to drain. Remove excess fat from pan. Add asparagus to the pan, season with salt, and cook for a minute. Add garlic, and lemon zest. Add pasta and toss. Squeeze in the juice of lemons and some of the Parmesan cheese along with a little reserved pasta water and some back olives. Toss well until pasta is coated.

To plate, spoon the pasta onto a serving dish. Place bacon swirls, top with remaining Parmesan and lemon zest. Add cherry tomatoes or basil for garnish.
