There is nothing more satisfying than diving into the intense flavours of these tangy hot sausage chunks sautéed with sliced onions, potatoes and chillies. Sausage Chilly Fry is one of the most popular dishes from the heart of Goa and must try if you want to experience the flavours of Goa.

200 grams Costa’s Goa Pork Sausages
1 tsp oil
2 medium onions, sliced
1 green chilly chopped
1 medium tomato, chopped fine
2 medium potatoes, diced
Salt to taste
Freshly chopped coriander leaves for garnish

Heat oil in a non-stick pan, add sliced onions and chillies and stir. Add potatoes, sausages and some salt.
Cover and let is fry for a few minutes stirring occasionally. Add chopped tomatoes. Cover and let it sizzle for a few minutes more until the onions will be soft and potatoes cooked through.
You may cut the sausages before cooking or separate into smaller chunks after cooking as desired.

Garnish with chopped coriander and serve hot with warm goan poiee or bread.
